Maftoul مفتول These beautiful balls of flour take hours to make, but are worth every minute. Whole wheat flour and bulghur mixed with coarse whole wheat flour, sprayed with salt water and hand shaped into small balls. Maftoul is enjoyed as a main dish with chicken and topped with a sauce of vegetables and chick peas. Palestinian maftoul at its best. It takes special hands to make these.
Maftoul is supposed to be steamed two times. We steamed it once and added the spices and onions. Just rehydrate by soaking in warm water for half and hour. Steam again and add onions, spices and olive oil. Enjoy with your choice of meat, vegetables and sauces.
